Be The Hostess with the Mostest This St. Patty's



With St. Patrick's Day right around the corner, you have the chance to be prepared to be the hostess with the most-est this year. Snacks and drinks don't always have to be loaded with calories and low in nutrients. This year, we will make our guests leave with full bellies while ensuring our food is healthy.


Healthy and Fun St. Patty's Recipies

Edamame Hummus

  • Ingredients

    • Shelled edamame, 1 cup

    • Tahini, 3 1/2 tablespoons

    • Water, 3 tablespoons

    • Lemon juice, 2 tablespoons

    • Canola oil, 2 tablespoons

    • Garlic cloves, 2 chopped

    • Kosher salt, 3/4 teaspoon

    • Onion powder, 1/4 teaspoon

    • Black pepper, 1/8 teaspoon

    • Olive oil to drizzle on top

  • Put all ingredients into a food processor and blend.

  • Let it sit in the fridge for about an hour.

  • Serve and drizzle olive oil on top. Pot o' Gold Applesauce

  • Ingredients

    • Granny smith apples

    • All-natural, unsweetened applesauce

    • Golden raisins

    • Cinnamon

  • Pour applesauce into a bowl

  • Add raisins and cinnamon on top.

  • Cut apples into slices and use a shamrock cut out to add apple chunks to the sauce. Irish Nachos

  • Ingredients

    • Thousand Island Dressing:

      • Nonfat plain Greek yogurt, 2 1/2 tablespoons

      • Ketchup, 1 1/2 tablespoons

      • Sweet pick relish, 2 teaspoons

      • White vinegar, 3/4 teaspoon

      • Hot sauce, 1/4 teaspoon

      • Garlic powder, 1/8 teaspoon

      • Onion powder, 1/8 teaspoon

      • Kosher salt, 1/8 teaspoon

    • Potatoes:

      • Russet potatoes, 1 1/2 pounds

      • Extra virgin olive oil, 1 tablespoon

      • Garlic powder, 3/4 teaspoon

      • Onion powder, 3/4 teaspoon

      • Kosher salt, 3/4 teaspoon

      • Black pepper, 1/8 teaspoon

    • Rueben Topping:

      • Extra-lean deli corned beef, chopped, 3 oz.

      • Reduced-fat Swiss cheese, 1 cup

      • Sauerkraut, 1/4 cup

      • Parsley for garnish

  • Preheat oven to 475

  • Combine dressing ingredients, cover and refrigerate.

  • Cut potatoes into thin, even slices.

  • Toss potato slices with olive oil and sprinkle seasoning to toss again.

  • Place potatoes on a baking sheet without overlapping.

  • Bake potatoes for 12-14 minutes.

  • Flip potatoes and bake again for 5-8 minutes.

  • Once baked, mound potatoes into layers while adding the corned beef, cheese and sauerkraut.

  • Place mound in the the oven for 5 minutes.

  • Garnish with parsley and serve.
